Banana Bread

Ingredients

  • 1 1/2 cups flour, sifted
  • 1 cup sugar
  • 3/4 teaspoon soda
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 cup mashed bananas
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter

Directions

Combine dry ingredients. Beat eggs and mashed bananas. combine the 2 mixtures and add butter.

Bake in greased loaf pan in 350F oven for 1 hour.

Hear's another time she used that steel knitting needle. If it comes out clean, the loaf is done.

Banana bread is actually very popular in Sweden too. But bananas are not low in cost. In fact, often very expensive to buy. However, very ripe bananas can be used for baking. Those can be bought for half the price.

Did you know that you can freeze bananas if you're going to use them for banana bread?

Personally, I don't like eating bananas when they get too ripe, so if I have some that don't get eaten in time, or if I get a good price on ripe ones, I just freeze them an use them for banana bread when needed.
